The toughest part of the equation is either having someone receive your meat from the field and getting it ready to fly/ship home...or doing it all yourself. Say you kill a bear and a bull. Unless you have something pre-arranged, all that meat and trophy will be yours to deal with when you get back into town. It takes serious time to get several hundred pounds of meat + capes + antlers ready to head south. If you've got a couple days extra on the back end, use it to prep stuff. Otherwise you're going to depend on others to get it done and that will likely cost money. If you've got the means, arranging for taxidermy and meat prep there...and then later shipping south...is the least stressful way to go. I know from doing it both ways. I have killed a bear and a bull on one hunt and know what that's like. If you'll be dealing with any meat yourself, read on....
Once back in town you've either got to get the meat ready to fly home with you or ship home later. No sense flying it with you unless it is frozen, boxed and leak-proof. Baggage fees for extra meat will be substantial in my experience, and can be severe depending on your airline. A different option is to get meat boxes in town and put your moose meat in them as-is...big and little chunks...and then have it all frozen to ship home. This means you need to find a person who has a BIG walk-in freezer to keep your boxes of meat. You also need someone who will pick up your boxes of frozen meat, take them to the airport and ship them to you. That person needs to know exactly what they are doing and have plenty of experience with it. Sometimes one person/entity can do both things: keep your meat frozen and ship it to you. Bingo...that's a good deal. Once it gets to you it's 100% on you to handle it quickly and keep it cold/frozen until you or a local processor can cut it.
There are a hundred intricacies (and hard work) involved between dropping the string or hammer, and finally sinking your teeth into some great moose or bear meat. The time to make arrangements for this stuff is right now. Going afield without a solid plan is a formula for spending a lot of money later and maybe bringing home less than you hoped.
