i have been watching some youtube videos of a guy in wyoming with pointing dogs that gets into large numbers of birds (chukkar and hun partridge, mostly with sage grouse, too). Didn't know bird hunting there could be so good. One of the guys only makes a point of harvesting one bird in a flush versus trying to double or triple. makes me want to get a setter or english pointer and go there! any roksliders upland hunt in Wyoming?

Don't know which YouTube-r you found, but there are a couple that are making videos on release birds and playing it off as wild birds on public land.

Sure there are birds to be found in WY, but I wouldn't call it an uplanders destination. Don't believe everything you see on youtube and instagram....
So, if I understand you correctly, some dude could take a covey of pen raised birds, let's say 10 chukkers @ $12.50 apiece ($125), stick them waaaaay out in the sticks, return to truck, cut his dogs loose and they'll run out 500 yards and point these birds. Then, during the flush, all of the birds fly off like bats out of hell vs the usual trying to kick up a pen bird to make it fly. film it, and put in on youtube......release birds? Huh?
