Which broadheads would you choose?

I'm really not sure on the penetration aspect. A razor sharp head always helps.
No, a lighter arrow probably won't help penetration. If you already have low energy then you don't want a lighter arrow for penetration purposes. Look at the trad guys shooting 40-50# slinging 500-600gr arrows!

If you are just shooting whitetails its probably not a big deal.... but I would be wary of bigger animals with a light arrow.

The other thing to change is draw weight 😁 No reason not hit the gym and increase that! Just look at Blowmar's wife, she pulls 70#- check out their draw weight specific videos 😉 (you may or may not want to watch with your wife as they are very skimply dressed to "show off" which muscle is working)

Yeah we both workout, so she’ll get stronger, but she’s always pregnant (whose fault is that?), which interrupts consistently being able to lift heavy. Also, she can draw 55, but we mainly hunt whitetails, and she needs a weight that she can draw with relative ease, not struggling
 
Broadhead design and clean flight win penetration tests all day over nearly everything else. If planning to stick with the same target animals and already getting good performance from a penetration standpoint then going to a lighter arrow will do little to change the penetration potential as long as the head design is appropriate and the arrow well tuned. Running some quick math numbers if she stuck with a hundred grain head, getting to a 280 grain arrow is realistic, and speed should be 25ish FPS quicker or around 270 fps. That is going to be very obvious in trajectory.
