A tip for fish I read in Field and Stream years ago: Freeze it in water in ziplock baggies. I don't think we've ever had any more than 3-4 years, but it's supposed to keep damn near forever.
This works great, until your mother-in-law takes care of your house while you're out of town and accidentally defrosts your freezer. Then any leaks in the frozen fish zip lock bags let the fish water drain into the bottom of the freezer, and even the items that should have been salvageable now smell like "old" fish...

I know a few GAME HOGS that I will guaranty throw a lot of freezer burnt stuff away "fish and venison".
I'm not super organized but have a pretty good handle on my chest and upright freezer, anything beyond 2 years goes into the pepperoni and summer sausage category ..... no waste / no throwing things in the trash.
