What caliber to add?

Quarter bore! Or more reasonably, a 6 creed would suit your needs and likely replace everything you own that's bigger.

Here's a 25western I just wrapped up. Again, more realistically, a 25 creed would be great. I saw it is listed on Saami's site and I'd guess likely to become mainstream this year. It didn't really blow my skirt up, I thought it was slow, but it would be fine in the field with 134s or 135s.

6 Creed is kind of the easy button and you can still get good velocity out of a short barrel with it. I like 25 Creed too back when I shot 131s around 3000 fps (24 and 26” barrels) but it seems guys are shooting the ELDs and Bergers slower. More bearing surface, etc. We were probably stepping a bit hard on the 131s in the 2019-2020 timeframe.

I actually like the idea of going 25 PRC or 25Wes like above better than creed for hunting. 20” barrel and a 133/134 would be cool.
 
Got my answer to this years ago. I have a problem with recoil and heaviest rifle I'll shoot anymore is the 30-06 and don't do that a lot. It's my elk rifle. But found out my 6.5-06 kills elk just as dead as anything and just as quick. But my 6.5x55, probably the most under rated cartridge in the world is in the same class for me. Last year I added to my 6.5's with a 260 Rem, really nice to shoot. Got the 260 just to get a new rifle and all these 308 case's now haave a new home other than my 308. I could go with the 243 in fact I do have one but it does not inspire confidence in me for big game. have killed three deer with three shot's with a 243 but still leaves me wanting. Now to tell the truth, I think my 22 mag would make a great deer rifle. Next to no recoil, very accuratre and I'd simply need to learn to hunt better, maybe to within 100 or so yds max of a deer! Killing is not about how much recoil you can stand but how well you can shoot the rifle and if you can get into reasonable range for the cartridge your using! Alsso about learning the best shot's for a quick kill. Used ot drive interstate trucks for a living and surprising how many little out of the was slaughter houses used to ues a 22 LR to kill the cows! Last I heard when I was driving, and I've watched it, they were using stun guns to the head and mostly killed very well! Been a long time and don't know what they use now. I think the best answer for this is learn how to kill well then choose a cartridge that fit's in there.
 
Someone I know may be purchasing a new rifle (bolt action) for me and was asking what caliber I wanted for hunting. The current calibers I own are .223 rem. (practice and coyote gun), 7mm-08 (deer rifle), and .300-win mag (Elk gun). If you were to add another caliber, what would you add, especially if you want to shoot it suppressed and as a mountain rifle? I'm thinking 7mm PRC. I don't handload, so having factory ammo options is a must.
There is so much lap in cartridges picking a new one might be hard. You have a great one in the 7mm-08. All it needs is the right bullet for what you want. I would not recommend any magnum for no other reason than I won't shoot them anymore myself, to much recoil! I recently had a 260 Rem barreled and the thing is just super. I also have a 6.5x55 and love it also, both will do the same jobs. In the past My pretty much go to rifle was a 7x57 or 308 but, the 7mm-08 will do about the same and easier to find ammo. In my opinion you do have a weak spot, elk rifle. You have a 300 Wim Mag which will certainly do the job if you can stand the recoil. But, rifle I got late in life I find better lacking the recoil. 30-06. Avoided one all my life but mid 90's I inherited one that has completely changed my mind on it. Have used it quite a bit on elk and three elk with three shots is hard to beat. Recoil is very manageable and ammo easy to find. But have to say I'd watch the bullet's I'd use in it. I use 180gr bullet's only. If I were to step up in game say, bears, I'd step up in bullet to 200gr.I am well aware that any bullet you might choose in 30-06 will kill any elk you shoot with it, just depends on how you choose your shot! you need the shot that will give the best odds of a clean kill. Varmint bullet to the brain kills dead right there. 200gr bullet in the leg breaks a leg and leaves three more for running in. The 308 would also be a decent choice but the 30-06 handles the 180 and up weight bullet's better.

.22lr and or a shotgun. You are covered already unless you want to jump above small bore. 6mm or 6.5mm maybe. So many cartridges to play with. How about the new military round ?
 
You're cutting you 7mm down to 18" and suppressing it? Sounds like you've got your mountain rifle sorted out, assuming it's not overly heavy.
I'd spend more time thinking about the rifle and its role, then cartridge second. That said, longrange steel banging, you could do worse than a 6CM that can double for deer/pronghorn.
