I do the same thing as manosteel. I keep a spreadsheet with everything in subcategories and have columns to just say "1" or "2" and everything subtotals for two people. That helps my wife and I know our weight for each trip we go on and helps us make sure that she's carrying the right amount. It helps us add/subtract from each other to make the ratio of weight right.

I also like to keep tabs at the bottom for previous trips so we can remember what sort of weights we had for different length trips and to different areas - then we can remember if we need to adjust the ratio etc.

I also keep tabs for product research - new shelter tab because I'm trying to decide on a new shelter. Make lines to estimate different products and configurations.

Sometimes I guess I can't help but be an engineer...

Here's a screenshot of my main gear page. I can add or subtract whatever I want from the different categories I have built up into the pack list and daypack list, or I can simply place certain items in those lists rather than an entire category. I'm not taking everything listed within the various categories, but this should give you a good idea of how I break things down and organize. The "toiletries" category got cut off, but everything else is there.
