Weed control in garden

a thick layer (~4" minimum and more the merrier) of mulch such as straw or woodchips at the beginning of the season will suppress the weeds, retain moisture in the soil, breakdown slowly into Soil organic matter, support beneficial soil biology and while I suppose there could be some cons, nothing near the ill effects of herbicides on your garden and your health
 
Spent a few years as a full time "gardener" selling direct to consumers. I did spend a good bit of time spreading mulch, but very little time weeding. Also can ditch the tilling, use a broadfork for a couple of years, leave as much root mass in the soil after harvests and after that you can dig holes with your bare hands...

I put down the commercial quality fabric then use wood chips. I put them 4-6” deep. They will break down over the years then I scoop them up and put them on actual garden for compost. I get chips free from the tree trimming guys. Having a tractor with FEL makes it easier to manage.
 
I get a truck full of woodchips from the tree trimming companies every few months. 4-6" of wood chips directly on the ground with no fabric or plastic keeps 90-95% of the weeds out. What very few make it through get pulled in just a few minutes.
