To tongue or not to tongue

Been curious about tongue for a while and really close to giving it a try against my family's uggs so I may be eating this alone. I know there are recipes and some are better than others so if you have a Killer recipe bring it on. My questions is for those who have tried tongue, if you did not know what it was would most people like it or is it a acquired taste thing?

If you ever get a chance try beef de Lengua(tongue) tacos. It’s very tender meat and I really enjoy it. I don’t think it’s an acquired taste, very mild flavored, and it shreds easily if cooked right, almost like pulled pork but a finer shred. My wife has made elk tongue also and we like it. We both are from Hispanic families so it’s not sometime out of the ordinary for us. I grew up helping my grandpa butcher sheep, goats, pigs, beef, deer, and elk, and he never through away any part of the animal that was edible.

I’ll ask my wife how she cooks it but I know after it’s cooked and shredded we make tacos with just the shredded tongue topped with diced white onions, cilantro, and some hot sauce, and squeeze a lime over it. My mouth is watering thinking about it!

I ate a lingua burrito without knowing what the meat was. Well I ate a couple bites before inquiring as to the origins of the protein. Didn’t care for the texture.

One of my favorite meals. It’s really sad that most don’t bring out the tongue with the rest of the “prized” pieces such as back straps and tenderloins. It’s highly over looked!

Tongue can be amazing, lengua tacos are outstanding. Had some a few months ago. The way I like to do it is to shoot two bull elk:

Then pose with your elk tongues:

Pressure cooked them to make them extra tender:

Then remove the weird outer layer, cut up the meat into cubes and fry it with spices. Serve as tacos:

Oh God, that looked like tonsil stones in the frying pan.. i wonder if elk get those? I seen the tongue thing on a meateater episode and always wondered about it. I think they boiled it after removing the outer layer.

Tongue tacos are great! I think my recipe came from one of Hank Shaw’s cookbooks, it’s boiled in a bunch of spices, onion, etc, then peel the skin off, chop, fry and serve. I only started saving them 3-4 years ago but wish I would have done it long before that. The only downside is that there isn’t more per animal. One elk is about enough for a meal for 3-4 people but it takes several deer to make a meal. My boys absolutely love it also.

You can't go wrong making tacos out of the tongue. I simmer the tongue for a few hours on the stove top in water with herbs and spices. Then peel the outer skin off, dice it up, throw it in the cast iron with taco type seasonings.
Toss the meat on corn tortillas, with cilantro, onion, and lime juice.
You won't be able to tell its tongue at that point.

We make cow lengua and cachete tacos monthly if not sooner. So good!

OK Tongue Tacos it is, what abut pressure cooking it or is boiling in seasoned water the way to go ?
I've done it both ways, pressure cooker is definently faster.
Simmering takes a couple hours until its ready to peel. I add salt, garlic cloves, onion, and bay leaves to the pot.

I’ve done it both ways but pressure cooker is easier and faster I think. I season it about like GrayGoose. Don’t forget the bay leaf;)

Man now I mind is going 1000 MPH !
What about a Beef tongue posole or menudo ?
I make a great New Mexico chili Menudo and posole add it to
the menudo and substitute the pork for tongue in the Posole ?
Guess I better try it first
