Talk me out of a softshell

If you go the soft shell route the Sitka Mountain jacket or vest is about as minimal as you can go with solid wind stopper. They’ve either discontinued or are updating the line so lots of closeouts deals on the now. I’ve been using the vest as early season wind layer for a couple years and just picked up the jacket for 60% off retail.

I live and hunt in pretty much the exact conditions that you originally described. I've had the rubicon jacket for 4 or 5 seasons now and I think this is the article of clothing you are looking for. Its very durable and have no pulls or tears after years of use. Warmth I would say is equivalent to just a basic hoody but it blocks the wind well. For my November deer tag my system is base layer, peloton 200, rubicon jacket, and a puffy for static glassing. Other than base layer the rubicon gets worn the most and often all day except if its really warm in that season.

I would start off with a 2nd hand OR Ferrosi and see how that treats you. I think the MH Chockstone was well regarded for its ability to hold up to climbing nasty offwidths.

Soft shells are usually a marginal choice for most applications except for being quiet and having good abrasion resistance. Start with something on EBay for not much $ IMO.
