Well we knocked off a lot of your suggestions. City museum, sugar fire, crown candy, arch and quite a few others. We didn’t have a bunch of time but did enjoy looking at the old (to me) buildings etc.

The City Museum (basically a huge art exhibit that you climb through) is one of a kind, and really fun.
