Ive always cut my own meat, but I will vouch for the owners of Hawley's in Challis. Chris and Dorothy are honest and hard-working people, and that's where I'd be taking my money. I think they bought the company in 2014.

Yup or maybe it was ‘15. I took an animal there instead of driving to salmon that year. Never again! 215 lbs not incl blackstraps n tenderloins. Got back 75 with those pieces incl in the weight. He was more worried about getting the 4H animals done than wild game.
