I tried the LEM Maple Bacon cure this year. I usually buy a few rupture pigs to mix in with my venison brats and hotdogs. This year there was enough to do some bacon. I like it meaty not fatty and this was perfect. We wound up sealing up 25 half pound bags.
I added a 1/2 cup of homemade maple syrup and a 1/2 cup of brown sugar and it turned out perfectly sweet with the right amount of smoke flavor.
