Following for inspiration. Recently sold my full suspension so I'm looking at hard tail, fat tire bikes for this very purpose.

I’ve had no problems stopping on relatively steep descents on my fat bike with a 70ish lb pack. I’m not descending at 30 mph or anything so checking speed but not a huge issue. I’m not running into people though usually. How quickly can you folks stop when loaded down?
Not all locations allow someone or something to just clear the way. Sucks dealing with the spandex mafia when trail running and it'd have to be worse if they were hauling meat out.
That would be the way to go for packing. I’ve considered using a bike for access to one of my spots but really would not want to pack any substantial load on my back while riding. I may be getting a little too old for that! I have seen one wheeled bike trailers that would work pretty good for meat packing and maybe be more suited to single track or rougher terrain.
If you're planning to wear your pack, make sure it has a low neck support or a way to modify it. Leaning over the bars pushes the pack forward, and with a helmet on it severely limits your ability to look up. I would test out wearing your pack with your helmet on first - you may be surprised at how much it limits your vision.
