Pellet smokers are about as set it and forget it as we can get. It is still below freezing up here in Alaska and I am not sitting outside to constantly tend to a wood fired smoker. It burns quite a bit more pellets in Winter so I smoke for about 2 hours then finish it in the kitchen oven. It is bear and pork and that means I must be sure it is fully cooked to avoid parasites.
