I’ll be hunting in the back country for a week and the forecast is calling nonstop rain. (temperature is 40°-60°.)

Would it be better to hang a deer under a tarp field dressed (hide on) for a few days, or in game bags, potentially wet?

Why can't you hang it in game bags under a tarp? Whichever way you go you gotta keep the meat dry
Absolutely could. I guess my concern is butchering and transporting to camp in the rain means hanging wet game bags.

Several years ago I ran into this and I rigged a piece of 2 mil plastic to shelter the deer while I butchered it. Bring a big enough piece so you have room to be as creative as needed.
