I typically use a CRKT K700KXP Ken Onion Skinner. $45 on amazon and it has K110 stainless steel blade with high hollow ground. The handle leaves you wanting more but it gives the Benchmade Hidden Canyon Hunter a run for it's money.

I recently picked up a havalon... already gave myself 6 stitches with that sharp son of a B!
Any interest in selling that Ken onion skinner? I lost mine on a hunt 2 years ago and I’m sick to my stomache about it

I use a Milwaukee carpet razor blade knife and an old school grayman knife suenami or something like that that I took to Iraq in 08-09.

I have been using a Morakniv bushcraft knife for the last couple years and it has yet to fail me. East to reshaped and holds an edge really well.

Back when this thread was first started, I was still 2 yrs shy of a 45 yr run with the same J A Henckels. For the last 4 seasons, I've been very happy with a Grohmann #1 with stag scales.
I still carry the Henckels as a backup.

Generally its one of my Ingrams. Don't usually bone in the field, but several of his B&T or Lite Hunter patterns are used for boning at home.

I've found the new Benchmade Flyway, while advertised for small game and waterfowl to be excellent for doing the small intricate work when removing the hide around the face. Getting around the eyes, preorbital glands, splitting lips and turning ears. It's a select edge 14 degree angle which some may dislike though.

A few years ago the Alaska boys enlightened me on the Cutco 5718H with a Double-D serrated edge. I doubted it until I got one and used it on a huge old bull moose. Most impressive skinning, disassembly and boning knife I've ever owned. Not a small or light knife. Totally functional. Too much for deer, but superb on caribou and moose. I found out that all serrated blades are not equal. The Cutco Double-D goes through tough tendons and ligaments like nothing I've ever used. I own and use a Havalon periodically, but I require a sturdier blade on big animals when taking them apart.

Interesting! Never seen a serrated knife like that. How is it to sharpen?
