Exactly what I was gonna say.I would just get a standard 90 fitting to come out of the disposal instead of capping the tee. Don’t think they make threaded caps for those tees

Looking at, you should be able to cut the drain out, and leave about a inch or so from the main stack and install the disposal and reinstall a p-trap and work back.
The height won't matter once the p trap iss installed. (A masterplumber might say differently, but never had a issue and multiple times have installed disposals this way) but dang, you don't have alot of room.The disposal drain hole is higher than the stack drain, not by much though. Is that enough elevation?
It’s going to be real close if I can get a P trap installed between the stack and the disposal.
