I have a buddy who has killed bison, bear, big hogs and a truckload of deer with a 41 lb draw longbow.
A sharp broadhead and good arrow tune helps with penetration. I wouldn't hesitate to hunt with 60 lbs.
Plenty, might even be better to help you keep better form longer during shooting sessions as a new shooter. Once your form is perfected and muscles trained you can always step up if you feel the need.
I have been shooting 50 pounds for the last five years and have taken bear, elk and deer. 60 pounds is enough to get the job done if you can do your part
I am just a weekend warrior who archery hunts for more opportunity and depending on a random year might not even have an archery tag. Generally I am elk hunting with a bow every September. All I have ever hunted with are 60 lb bows. I want a bow that has the limbs screwed down all the way and that I can draw from any position cold. Been archery hunting for 15-16 years and will be looking to fill my 10th archery tag in September. Sixty pounds is plenty.
More importantly is 60 lbs providing you enough holding weight. If you have a high let off hunting bow you may want to see if you can get down to around 80 percent. 90 percent at 60 lbs would be pretty difficult to stabilize.
