what tool are you using to remove the brain? That's been my nemesis.

Air hose !! Absolutely the only way to remove brains a cheap blow nozzle like the Merlin from Harbor freight simply turn the head upside down. Insert give it a shot of air shake it give it another shot of air. The brains are out.

Use two grocery bags to avoid having the brain get every where.

This one won't fit in the freezer so finished it up in the E-Boiler even though it is leaking.

Still needs to be decreased for awhile

Looks like it could double as a sious vide as well.
