I want to start filming my hunts and adventures. What would make a camera a better option than a GoPro?

The advantage of the Go Pro is it's small and can be mounted on your gun, head, arm, etc. That's where it ends. The cameras on the market today all have bigger sensors so the image quality will be MUCH better with a camera

Thank you. Is there a good option around $1k that is weather resistant and easy to learn how to use?

Olympus has the TG7. It can be dropped, drowned or frozen

Here are the key features
  • 4x Optical Zoom f/2-4.9 Lens
  • 25-100mm (35mm Equivalent)

i have a nice sony a7iv that i pack arround ..but i mostly use my GoPro because it is more accessible, and it still has good video quality

I also personally use a go pro to film during hunts. I can’t justify the movability of a big camera during a backpacking trip!

The best camera is the one you will carry with you and use. GoPro or similar scores great in that regard.

DJI have released some pretty good ones as well.

I second the suggestion about the best camera is the one you will carry and use. There is no point in getting a nice expensive dlsr if you never take it out to use because of its size. In terms of action cameras, you have lots of choices from DJI, to gopro to insta360 and much more.

I use a GoPro for more of a backup camera or a camera for a different angle. I also use a camcorder instead of a dslr camera. Easier to haul that around than a camera with a couple different lenses.

GoPro 12 and 13 are great models with a big jump in picture quality, and having 5.3K resolution means you can scale in a lot when editing in an HD sequence. If you want to step it up, the Canon line of camcorders are great and have many options depending on budget. Pair one with a varizoom and self filming is about as easy as it gets.
