Hey y'all,

I eat venison pretty much 5-6 days a week and looking for something to change it up. Anyone got any good family recipes they want to share?
Always partial to deer with biscuits and gravy

Or another one we do a lot with tenderloin is to cook it in a cast iron with some butter and serve it with some fresh blueberry pancakes. The tang and tartness of the berries really sings with the deer.

My wife made Venison stroganoff soup this weekend following a recipe from Pioneer Woman. She substituted venison for beef and it was amazing.

My Wife and I are always trying to change it up, here are a few things I've made recently that I have really enjoyed.

- This is the cheap version of the Bobby Flay barbeque duck with blue corn pancakes. I did Hank Shaws carnitas recipe and the jiffy corn muffin mix pancakes. It's one of my favorite recipes I've ever made.

I made this again yesterday with bone-in elk shoulder roast for visiting family. Everyone loved it.
Super simple.
Hardest part is just getting the elk.

I'm sure this is pretty basic for yall but figured I'd share anyway due to simplicity. Wife has me on Keto to drop some weight before season. She took my thinly sliced venison and elk ham steaks and rolled them up with cream cheese spinach blend and wrapped in bacon. It was insanely good. I'll be going through this thread looking for some more ideas, love these threads!

We cut the lower leg into 2” slices, bone in(sawzall works great), for osso bucco. Slow cook with your choice of seasoning. Makes for a very rich and delicious change of pace.

Just cause I haven’t heard it yet, I’ll make a plug for curries. Vindaloo (marinate cubes overnight), Thai red curry (I cut and sautée thin strips of venison and add it to the veggies/coconut milk/curry), and Jamaican “goat” curry stew are some favorite ways to eat deer, elk, or bear.

Curry doesn’t have to burn your face off (but IMO it should). I think a lot of folks are intimidated by making crurry from scratch (I know I was), but it’s not rocket science. I started doing it when I moved somewhere with limited restaurant options, and it’s been a lot of fun to learn. And once you get ahold of the basic ingredients you can do a lot of different stuff.

We age tenderloin vacuum sealed in the fridge for 4 weeks. Slice into sections about 1 1/2” thick. Sous vide to 132 and then sear on a VERY hot skillet. Or sear with a propane torch.

Wish I had the photos still but every season we make venison Pho. I roast the bones and make a stock, for many different recipes, but end up using it as a Pho base most the time. I like to throw a variety of muscles very thinly cut and toss it the piping hot broth raw as it cooks so quickly and serve. Tenderloin of course works well for this. Sounds like a lot of work but the only labor intensive aspect is making broth but which we can or freeze in a day for multiple meals

We did our own take on the stir fry mentioned above a few times. This was actually the best wild game dish I think I've ever had, and done with a large, mature Pronghorn buck. Honestly better tasting than anything I've had at a restaurant any time in recent memory

I made two venison recipes a few days back. They both tasted really good. One was Venison Barley Stew and the other was Slow Cooker Venison Roast. No family recipe, I just followed a video from the internet and it actually turned out quite good.
