I think dial in would work best. I zero at 100 and I'm good to go. If it is a longer shot that I need to take i will have or should have plenty of time to dial in. the follow up shot maybe the holdover would be better but technically I think it can be done with the last setting of the reticle.

I wouldn’t worry about dialing just yet. Truth is a vast majority of animals are shot without touching a turret and it’s not even close (as in < 1 in 10,000). You’ve got some great advise on this thread, don’t let the snipers drag you into the deep end of the pool.

thanks for the suggestion! i'm leaning toward the 308 or 7mm-08 (supposedly it has even less recoil than the 270). keep in mind, all of my caliber "knowledge" is from online searches. my main concern is that i don't want to go around wounding animals. hopefully only taking shots within 300 to 350 will help ameliorate that.
7mm-08 is a good choice, I just have never shot one so I can’t compare it to 308,270, 30-06. Also I would try and get closer than 300 yards until you have more experience. It is a lot easier to shoot a wounded animal at 100 than it is at 300. Good luck in your choice, looks like you have picked some good calibers.

:p I would agree about the turrets. The Meopta Optika6 can be bought with the 6.5 CM BDC reticle. I don't know how accurate those are or what bullet/velocity they are calibrated for but it's an option for using holdover and not dialing. The scope I suggested has covered turrets anyway.
