Finally figured out how to make ribs work

I tried ribs before and the waxy fat made them almost inedible. I had come across a post a while back that said to boil them first to render out the fat and decided to give them another try. I was doing some baby back ribs for Easter and decided to try the 3-2-1 rib recipe with a twist on 2 full racks of mule deer ribs.
I cut the ribs into smaller pieces and seasoned some water with garlic, onion, salt, and pepper in a big pot. I added the ribs and cooked them at a simmer for 3 hours. I then wrapped them with tin foil, with a little brown sugar and butter inside for 2 more hours at 225 degrees.
The last hour was unwrapped and brushed with bbq sauce every 20 minutes. They turned out great and we will now do this for all animals we harvest. A small bone saw in the pack makes quick work of cutting the full rack of ribs out in the field.

Those look awesome. I bone mine out to add to the trim pile for burger. On an elk it’s atleast 20lbs of meat that a lot of people just leave behind.
 
I put them into a pressure cooker to remove the waxy stuff and to tenderize the meat. Similar to your process just quicker. I agree, the preboil is key.
Instant pot for a while and then finish over charcoal or in the oven is hard to beat.
 
I simmer them in boiling water for a few hours and try to pull them out just before they start falling apart.

Season or brush BBQ sauce and broil until crispy. They are as good as any pork ribs ive ever eaten when following that process.

If I have my pack animals with me when I cow hunt this year, I'd love to pack out the whole rack of elk ribs.
