Field processing: cut deer in half?

I've cut deer at top of hips or bottom of backstrap and it's in two relatively similar pieces with hide on. Also don't cut hide from the outside going in with your knife... It's cuts hairs and gets them everywhere. Make a small cut and then flip knife over and cut from the inside out and less hair will get on meat. I prefer to use a zip knife.
