Elk and bison on the menu?

At a fancy restaurant, I thought you couldn't sell wild game? Is it from Texas in a high fence or something or new zealand and the "elk" is red deer? Saw specifically durham ranch bison and duncan ranch elk on a menu

There's a bunch of elk/bison ranches throughout the country that raise butcher animals, they're not wild game in any sense of the word.

They sell a few bison every couple years just outside my home town. Feed them up heavy on corn to finish them and add some fat.
