My new favourite way to prepare marsh ducks

1. Three large mallards breasted out. Brine in salt/brown/sugar/garlic for 24 hrs
2. dice breasts
3. Add to hot pan with diced oinion until oinion starts to soften
4. Add broccoli, peppers, celery
5 when almost done, add sprouts and sauce (We just used the ready made VH sauce)

Serve over your choice of rice.

Made Pad Thai with some chickens earlier in the week. Have some ducks to butcher that I don't want to deal with plucking. Will try this (minus the broccoli!).
