Determining the % of incline

Is there any app or a feature on the iPhone that I've missed that will determine the approximate % of slope/incline of a trail that is being hiked?

only 2 ways to determine this, if you are grabbing trees to pull yourself uphill its steep and if your sliding downhill on your butt its steep, all else is easy!
I’ll add to this and say if you’re in a thicker area with brush and you have to go downhill backwards while holding onto nearby brush/branches/other vegetation you know it’s steep.
 
The Hornady App will give it to you, and you can get a measurement/ level app that will give you a reading.

Some range finders may get very the angle too.

Pretty sure if you have an Apple Watch, it will send the data to your Health app. It won't give you a percentage, but translates more to floors climbed. Not sure if that really helps you or not.
 
Caltopo has a slope-shading layer that's helpful for use when you're sitting at your desk in summertime trying to make plans.
 
There are plenty of tools and apps for slope angle measured in degrees, but not as much Im aware of measures in %. Do you need % or will a slope angle like “37*” work for you? If so many compasses have a tool specifically for this, plus some phone apps and other field tools especially around avalanche safety. Caltopo for digital.
 
If your app gives you the slope in degrees, simply take the tangent of the slope and multiply by 100 to get percent grade. Examples:
45 degree slope: 100 percent grade;
30 degree slope: 57.7 percent grade;
10 degree slope: 17.6 percent grade.
