Making bacon is one of the easiest things to cure/smoke.
Yup, Kosher slat, browns sugar, maple syrup and Prague #1 cure. 12 days in baggies in the refrigerator. Then one day on racks in frig to let dry out little. smoke to 150 deg. then back in baggies overnight to allow the smoke flavor to absorb into bacon. then slice and vac pack.

We were invited to a potluck bbq at a chefs house and there would be a lot of other chefs there so we were sweating what to bring - nothing would taste or look as good as what everyone else would have. We simply set a bowl of cooked bacon on each table and they all loved it. lol

Doesn’t really matter what type of wood you use to smoke since it doesn’t add any particular flavor to it. The type of wood used deals with how much smoke you want. Fruit woods produce a lighter smoke and woods like hickory, oak, mesquite will produce more smoke. Lighter smoke flavor vs. heavier smoke flavor. I like in between so usually go with something like hickory or oak. Pecan and Alder work well too.

Finally, I made it to the 1%!!!

I'm really surprised I'm the only one that voted I don't eat bacon.

However, when I have eaten bacon in the past, I would have it browned but not crispy. In this thread, is crispy meant to be that you can break a piece of? If so..... You damned heathens... That's gross. I grew up with my dad burning everything from pizza to bacon to bbq sauce. He liked his food charred. It was an amazing experience the first day in college I got some thick cut bacon and cooked it correctly.

I don't eat it anymore though.

This is a great thread. I'm getting tired of the large bs small caliber debates

I would assume someone who doesn't eat bacon should be grounds of being banned. But to each their own.
