Night will be better 99% of the time if you’re purely going for numbers.
That being said, I will always prefer hunting them during the day. The thermals and NV take the beauty out of a lot of it for me. Seeing a coyote peak up over a hill 800 yards away before charging in to close enough you can see the color in its eyes with its hackles raised looking for a fight is just something you can’t see at night.
IMO every new coyote hunter should be required to become efficient at day hunting first. It’ll teach you how to set up, call, read body language, and become a better coyote hunter. Also cut back on the number of neighbors dogs being shot because we all know that happens.
