Corned venison

Another vote for Hanks recipe. I used it on a couple of moose roasts and they turned out great.
 
+1 on hank Shaw’s recipe. I’ve done it several times. Always a hit. Just got a new smoker. Thinkin it’s time to try pastrami.
 
I did an elk pastrami a month ago and it was easily one of the best recipes so far this year. I pulled it from the meateater website(it's basically the Michael Ruhlman recipe with a couple tweaks)
