I took this Moose in Alberta in October. I have made braised Moose shanks, creamy cheesy Moose burger soup, chicken fried Moose steak, Moose cheeseburgers, Moose meatballs and spaghetti, braised Moose in a shitake mushroom sauce over homemade pasta, Moose jerky, and used the leftover braised Moose shank meat to make tacos. I butcher all of my meat myself. Later this week I'm going to make Texas style chili using ground as well as cubed Moose meat. Next month I will make Moose summer sausage, salami, and Kielbasa. I couldn't post all the food pictures. They ran over the limit for one post. I have had more than a dozen different people over that wanted to try Moose. So far the consensus has been that it was one of the best meats any of them had ever eaten.
