Wusthof Classic and a Benchmade Meatcrafter get most of the use at our house. I do also like Knives of Alaska filet knives in the kitchen as well.
Clovis, is your knife stainless steel or high carbon version?I still like a heavy one that I can sharpen easily at home--Wustof Classic Cook 8 Inch Chef's knife.
