Clovis, is your knife stainless steel or high carbon version?I still like a heavy one that I can sharpen easily at home--Wustof Classic Cook 8 Inch Chef's knife.
A restaurant owner buddy turned me on to Mercer- Quality knives at a reasonable cost.
I've been using these 3 for the past 5 years or so. I keep them away from my wife and sharpen on waterstones. I've been happy with them .

Stainless--I wish I had picked up one of the high carbon anniversary knives when they were around and discounted, but still very happy with the stainless version.Clovis, is your knife stainless steel or high carbon version?
