Butcher or DIY

if cold out ,I prefer to process my own but when hot ,I would just as soon bring it to a butcher who has the facilities to let it hang awhile

Its just another life skill you should know how to do. Once acquired then you have the choice whether to DIY or use a processor should the condition or situation warrant.
