What is some recommendations for someone who hasn't (ive tried maybe 2 in my life and they tasted like ass) tried bourbon but wants to?
This is a tough one to answer without knowing your taste at least a little bit.

Starting out I'd advise 80 proof ish, and probably not a rye or at least high rye as it can come off as more hot/spicy even at lower proof.

Probably try wheated whiskies like Makers Mark, or Benhiems for instance. Try regular Elijah Craig small batch and Woodford Reserve, both are sweeter, have pretty traditional flavors, and aren't expensive.

When first tasting, smell it with your mouth slightly open. It will help you "taste" the smell. Try a tiny splash of water (non-clorinated) added a few minutes before tasting. Swirl the juice in the glass let it sit and breath a little just like wine. Then add a single piece of ice and taste.

You'll find some taste entirely different neat than with water, or ice.
Don't get in a rush. The first drink on a clean palate or after eating, coffee, etc. always tastes different, than after it's been on your palate a few minutes.

Wild turkey, elijah Craig. I’d start with gentleman jack but it’s ‘technically’ not a bourbon

Black label Evan Williams or Ezra Brooks is my go to. I’m just a guy that likes bourbon and doesn’t want to spend a fortune.

Same. Ezra is good but I love the Rebel by Lux Row also. If you can find some of there store pick single barrels, they are delicious and cheap for a single barrel wheated Bourbon

Well, I tried Buffalo Trace tonight. Needless to say, wasn't impressed. Seemed bitter and wasn't smooth for me. (Or more of the after taste was disgusting and not enjoyable)
And yes, I sipped it, not drank it like a coffee. 😂

You probably should stick to Old Fashioneds for awhile. You can step up the proof of the bourbon in them as you go along. Old Granddad is pretty sweet. I’d try some of that. But if you don’t like the taste of Buffalo Trace, it may be a long road to how…

Also, don’t let any snob give you crap for putting a cube of ice in your bourbon. There is a chemical reaction that completely changes the composition of the alcohol. I love my bourbon over a big clear rock. When trying a new one I typically will get it neat in a Glen Carin glass with another glass with a rock in it to taste the difference and enjoy it fully.

How did you drink it? Neat, water, ice?

I'm not a big fan of Buffalo Trace myself but don't consider it bitter.

What do you normally drink? Rum, Scotch, vodka, mixed only? What kind of wine? What kind of dessert would you ask for? Do you order a coffee black, cream, sugar, or a foofoo coffee?

Without knowing what taste profile you enjoy, we're all going to offer idea's based on what we like.

One that is low proof, dessert in a glass for me is Alberta Rye Dark Batch. Can't buy it here anymore.

You might just not like bourbon.

I think @BigNate is going down the right path to try and find a flavor profile you like. Im not sure what you would find bitter in buffalo trace. Its fairly sweet. Maybe its the oak on the finish you dont like.
