Best one handed belt pouch??

I use nimrod pouches. they have a 1/4 turn twist plastic closure. fleece with a nylon waterproof interior.
 
The old Kuiu's I had were too thin of material and I needed two hands to zip them closed. Opening was easier. I have an EXO K2 now and I like them better. I can usually get them to zip with one hand. I still carry the Kuiu's inside my pack for small items.

Do you have? Can you open and close with one hand?

Yes, when MOLLE'd on a waistbelt like the one on an MR Sawtooth or Beartooth, it is securely attached, and can be opened with one hand.
 
What’s going in the pouch? I like the overlapped tops on some dump pouches. Nothings coming out unless you want it to and super easy to push stuff in.
 
I've had really good luck with Triple aught design's GPP1 pouches for easy access on a belt. They open and close easily with one hand and work great on a normal (non-molle) belt too with their pass thru on back.
 
A molle webbing attachable dump pouch with a good drawstring closure works pretty well and can be rolled up out of the way when not in use. Drawstring top with cordlock keeps things as secure as a zipper closure and can be manipulated with one hand easily.
 
I have the Kifaru and Exo. I do think the Exo opens and closes a bit better as it has more structure to it.
