OTC archery coues in Arizona. Haven't done it myself but I've been itching to. I've only heard good things.
 
I don't really have a good answer, but I noticed in another thread that you're from Alabama. Moved from Colorado to Alabama a little over two years ago for a job at UAB. New member so I can PM you yet... 😂

Depending on where you hunt locally, that Christmas break hunt might take you out of the whitetail rut around here.

Cous deer does look like a good (challenging) hunt though!
 
Texas exotics or hogs are a great winter option and can be affordable if you look around.

What area of AZ is good? Our son transferred to college out in Phoenix and this would be a great winter break for us.

I only the know the Colorado system so others may have input on other states. If you're open to Colorado, I'd go to the CPW elk hunting statistics to get the 2020 draw recap report. All (or at least almost all) the late season hunts have "L1" in the hunt code. So if you open that recap report and search for L1 using control+F, you should be able to easily look through the draw results for the late seasons. Look for ones that didn't sell out in the draw to see what options might be available this year for the secondary draw or leftover or look for options that didn't require a PP to draw (if you're thinking 2022).
 
If you try Arizona check the regs they have made a lot of changes on the good units, I wouldn’t be surprised if they make it into a draw hunt before long or close more units?
