I'm not sure if the Keto/Carnivore thing works for acid reflux, but I like the Nextmile meals the best. They are all meat and vegetables. The packaging is compact too. Biltong is another "real food" option that doesn't take water or cooking.

I second Skurka’s recipes as a jumping off point.Backpacking meal sites have all sorts of suggestions. I use couscous as a base and go from there—bacon crumbles, sausages, tuna, packet chicken, with whatever spice combination you want.
You can do the same with instant rice.
