as a teenager i processed the first deer i ever shot. it aint like you can hurt it, it is dead!

just a saw and a knife is all you need. look at a picture on the wall of the meat department that shows the cuts of the cow and just start cutting to make it look like that picture.

but really you dont need the saw if you debone the meat.

a grinder can be added later or you can take the trimmings to a butcher to grind.

my tip----can the poor cuts!
 
Yes -- been that way pretty much since CoViD. We've also lost a number of butchers along the way.
