I shoot off a tripod a lot. I don't use a center column but I also carry a heavy tripod and shoot a bunch of competitions.
Quite frankly, shooting off a center column on a well-built tripod (that's the key, none of the lightweight tripods count here) it's going to be more stable than shooting...
You most certainly can change wind on the fly from the bino. I've gone it multiple times just testing things out. I don't use that feature.

Factory 88’s are 2735 in my rifle. 4350 loads are the same velocity.
62 grain with Varget are 3100. Lever was 3200 ’ish.
I’ve used Varget, Leverevolution and 4350 with 62 and 88 ELD.
29.2 Varget with 62 is very accurate. 4350 had fantastic ES with the 88. Case was filled to the top.
Lever had better velocities but sucked for accuracy.
