After that: maybe KS any deer archery, will attempt my best Tony Trietch impression out west; maybe KS mule deer rifle, if I draw
I'm sure I'll throw in some KS WT doe tags too.

There are units that have unlimited tags, but operate on a quota system for harvest. Once the quota is reached, the season is over. That is a very, very difficult hunt.

CO 1st Rifle Bull Elk.
Texas Deer, pigs, ducks, doves, and quail.

Exactly what El General said. If you apply, you're guaranteed to draw. MT offers this unlimited hunt in 5 different units all on the southern border of the state north of Yellowstone NP in the Beartooth. Probably some of the most physically demanding terrain in the lower 48, grizzly bear infested, weather changes on a dime, maybe 2% success rates BUT you have a sheep tag in pocket and are in beautiful, remote country.
