Hey guys, I've been making jerky from ground venison (jerky gun method and drying in oven) on and off for a number of years. I've used various commercial brand mixes bought in stores and have messed around with a DIY version or two. However, I've never been really impressed with any of them as far as flavor; nothing truly memorable. So I figured I'd ask you guys - do you have a DIY recipe that you swear by, to make top-notch, flavorful jerky? I'm not a fan of hot/spicy stuff, but prefer more along the lines of the smoky, hickory, mesquite types.
