Want to try shorter vane is weight a concern

I shoot VAP TKO with hybrid HPs and get random fletching contact on my rest which I’m sure is a shooter problem. Plan on shooting Hydes on an elk hunt and want to try a lower vane for a little peace of mind. Will adding or subtracting weight from the vanes effect tune or just pick one and rezero? Local shop usually has AAE stuff so I’m steering towards something from them to just get a few test arrows done.

I'd go with a AAE Max Stealth, or if lighter Airrzr 26. It probably won't change your tune at all.
 
What rest? while not ruling out shooter form error, rests and/or setup can also be a culprit and more solid fix then altering vane configuration.

Sidenote: what is your current fletch config?

If really needing to clean up clearance a hyb 23 is pretty small and low profile. I would try 3 with a hyde, but would likely feel more confident with 4 vane setup. It will technically change your tune, but I would not over think it at all. Vane profile, configuration, and current tune level matter much more than the weight adjustment IMO.
 
It’s an mx2 VAP TKO 3 hybrid hps fletched with Arizona mini max to left. I think going to the 23 is way more than needed
 
Contact sounds like a set up issue? What rest?

HP fly broadheads extremely well but 3 max stealth or 4 heat will as well, 3 heat seem finicky with fixed heads but those heads are pretty small.

I’ve shot 4-5 different vane combos into the same group at 60 yds, heavier more drag sets were lower in the group but really close.

You might try the Super Saber Mini vanes. They are shorter than the HPs and they seem (for me anyway) to work well. (For comparison, I shoot an expandable, 1.75 Sevr Hybrid.)
I've also had luck with the TAC Driver 2.75. The 2.75 is longer than the 2.25 Driver but, is is also shorter and may meet your needs.

To quiet my arrow down in flight and have a lower profile vane for windy days, I just changed from 3 Blazer vanes to 4 AAE Max 23 and the weight came out to within 1 grain. I also fletch arrows with 3 Flex Fletch FFP-360 for use with fixed blade broadheads and those arrows weigh 2-3 grains more than the AAE Max arrows. All arrows fletched with a right helical Bitzenberger at 3 degree offset and all three fletch types hit the same spot to 100 yards in my testing. Another side benefit of the lower profile vane is that I gained some distance on my Spot Hog Boonie dial sight since there’s less vane to get in the way of the sight housing.
