Using the liver

I’m not much on liver but I have a silly theory on mountain goat liver. Iv eaten a fare share of it, and can say the energy feel the day after is noticeable. Liver is one of the best organs, I could only think mountain goat liver being at the top end due to the nutrition in the feed they live on during the summer?

Anyone else eaten mountain goat liver and experienced it?

Last February we took an old worn out Billy, I couldn’t imagine his liver tasting very good, so I dehydrated it, ground it and capsuled it. Can’t say I notice any difference taking 6-8 capsules a day, but it can’t hurt.

A moose has a huge liver. And I am looking for the best ways to process it for table fare. I do like liverworst but fried liver needs to be well done with ketchup.
We process all our own meat so can make just about anything. Do folks use it in their ground burger or in sausages ?
My favorite which we do with deer liver is mix 1/3 liver with 2/3 ground. Make it into meatballs or meatloaf. Honestly to me it tastes even better than plain ground plus you get all the benefits of eating the liver. It’s actually a crowd pleaser if you can believe that, it’s that good.

He needs all the liver he can get.

Liver pan fried or deep fried in a homemade batter/oil with some onions and a homemade gravy is actually decent.
Barf. My wife makes me save our deer liver but I can’t eat it any other way than mixed with ground ha.

Getting fresh liver is actually her main motivation to kill a deer every year 😂 IMG_4376.jpeg
 
Cut in 1” chunks, sauté then freeze on wax paper over a cookie sheet. Place in a freezer bag and now you have the most awesome dog treats. We do the same with gizzards when the livers are gone
 
How is bear liver? I have a tag this year, so hopefully I'll get the opportunity to try it out. I'll save the liver from anything I get his year and try it, I like the mixing with ground beef idea. That'll make a great lunch for work with honey drizzled over it.

Growing up my mom wold put liver in with our round steak in gravy so whatever you picked out of the gravy, you had to eat it.....

Only live in the middle of nowhere when at the cabin. Got a house on the edge of nowhere.
 
Thanks folks. I will probably try n make some liverwhorst. We raise meat rabbits and our daughter makes maple flavored breakfast sausages from the entrals and any scraps.
 
This fall's plan will be pate and then gorge on bahn mi sandwiches for the entire next week.

And if you garden, grow some kohlrabi and pickle some matchsticks for the bahn mi veggies. Primo.
 
Dehydrate into powder, order empty pill capsules on Amazon, take as a supplement.

Liver is nasty.

Saved a few over the years. Don't feel bad about leaving it now. I find it gross... isn't it a filter for toxins? How can that be good? Tons of work to make pate - the liver is masked so much by other spices that one can almost eat it!! Pass...
 
Dirty rice. Even professed liver haters loved it.

I have tried to choke down liver as its packed with nutrients, and I like utilizing all that I can on an animal I harvest, but to me its absolutely horrible. After I found that dirty rice recipe it changed my opinion. Even my kids get excited to take the liver out of the woods so we can make dirty rice.

Works well with turkey heart/liver/gizzard too.
 
Make a bunch Boudin. Then take some out make in to balls, lightly flour and deep fry. Between that and smoked boudin… you will be come a God amongst your cooking peers.
