Turkey legs

The Instant Pot/ pressure cooker is a game changer for wild game- especially turkey legs and thighs. I pressure cook with broth and whatever seasoning I want, and then shred it up, usually for my upland white chili. The hrd tendons pull right out cleanly.
 
Meateater cookbook has a pozole recipe that is fantastic.
Jesse Griffit's The Turkey Book has an enchilada recipe with a sweet potato mole (It's a lot of work) but holy moses that is probably the best thing i've ever made with turkey hands down.
