Time of Arrow Flight / Animals Jumping the String

I shot a yearling doe once at 40 yards. Head down feeding quartering away and totally calm as she crunched on an apple. She was facing to the right at the shot.... she squatted down , turned and the arrow went in on her left side quartering away thru the liver and opposite lung. When I found her it took me a few minutes to piece it all back together after replaying it in my mind as I look at the entry/exit holes.
 
I’ve shot alert whitetail at 25-30 yards that barely moved at all, even after being shot.
