I've gone through several iterations of gloves and mitts, but have settled into a system that has worked really for me and thought I'd share. The system consists of a liner glove with an insulated over mitt.
The gloves are a liner glove—Black Diamond Gridtech Lightweight. Made with a 90g Polartec grid fleece and warm for their weight- 1.5 oz. I have some lighter liners, but not as warm and these still allow enough dexterity to operate my safety, work binoculars, use my range finder, etc.
The mitts I'm using are from Enlightened Equipment- Torrid mitts. They use Apex insulation of varying weights. Apex resist water much better than down and just a little heavier than down. I'll carry the 2.0 weight insulation ones for temps down to about 25° (1 oz) and carry the 4.0 weight ones (2.3 oz) for temps down to the single digits. I'm going to order the 6.0 insulation ones (3.4 oz) for frigid temps.

I'll wear just the liners when temperatures (or activity level ie climbing steep ground) allows. If my hands get cold when I slow down or stop, I slip the mitts on over the gloves. If I need to shoot the mitt slides off very easily. I might give the flip top ones a go with the heavier ones.
The nylon mitts cut wind pretty well and fend off light precip, but they are not a substitute for a waterproof shell if conditions warrant.
I'm on the lookout for some light shells, but typically not needed for most of our hunting season. They would also have to have a good adjustment setup as I'd want to use them just over the gloves all the way to over the heavier mitts and gloves.
