Sounds like you kind of want a "do all" caliber thats great for Antelope (which are usually long shots) and big enough for Elk. You already have this in your 7mm Rem Mag. If you want another all around caliber I'd recommend a 300 win mag, 300 prc, or 300 wsm. These are overkill on Antelope and still overlap some with what you already have. If you want a dedicated Elk/Moose/Griz rifle I'd recommend a 338 win mag.
.308 win wouldn't be my choice for longer range shots you're likely to encounter out west. I'd recommend something like 6.5 PRC, 6.8 Western, or 26 Nosler if there's a chance you have an Elk tag in your pocket while hunting Muleys.
As much as I hate to say it, a 6.5 creedmoor would be a fine plains Antelope/Muley cartridge that you wouldn't have trouble finding ammo for. Or maybe even a 25-06 if you're trying to be different.
