I've guided and shot several 2 or 3 year old cow bison in Texas at a buddy's ranch and averaged 390# of boneless meat. It went up to 450# when I kept bone in meat + ribs.Need is a strong word.. You probably should have used the word "want" . Hard to get a true bison tag. I'd pay $6k to shoot a farmed bison though.. Seems like a decent deal. Probably walk away with 800# meat right?

My 17-18yr old wild bull from Alaska's Delta Junction herd yielded over 1,000lbs of meat. I've done so for the last 3 or 4 years on personal hunts and never paid over $2500.
keep in mind these are immature cows not big bulls - less meat but the meat is "better" and cheaper.
A big 6+ year old bull will get you 500-750# of meat for ~$3500-5k. You might get more meat off of an older bull but at some point the quality of meat goes down as your yield goes up. Where the sweet spot is... that is up to you.
So both your meat yield estimates and cost estimates are both incorrect.
