What's your go to for fancy dinner ?

Gonna go with pork butt, ribs, and obviously brisket for most of the time. Ribeye or Prime Rib if I want to up the fanciness of the meal. I've been making fajitas from elk and venison top rounds lately and they come out great smoked to 140 or so then rest and slice.

Quick and easy: Tri tip, whole chicken split in two, ribs.
Fancy as in less often because of time: Brisket and pork butt. I prefer the butt over the shoulder but shoulder is what you find on sale for cheap and it'll do fine.

Quick and delicious is usually Tri-tip, Beer can chicken or chicken wings.

longer smokes- Pulled pork, brisket or pork belly burnt ends. I do ribs on occasion, but they are the least popular at my house.

If I am feeling fancy, it is almost always a prime rib roast

Last summer, I had sixteen tri-tips in the freezer at one point. This year, I have been all about chuck roasts.

Ribeyes or porterhouse are our go to,

Wings…. Nuff said

I like ribs and p.butts but my wife isn’t a huge pork nut. Bacon on a pellet grill (only thing a pellet does exceptionally well) will make you throw away your stove.

Salmon and spatchcocked chx is a favorite here too

Thighs on an stick burner offset opens up a bizzilion different options also

Fancy: beef tenderloin. I’ll never cook one another way. Beef ribs are also a crowd pleaser.

Regular dinner: pork tenderloins, salmon, chicken, chuck roast.

Whole chicken, spatchcocked, on a pellet grill. About an hour at 300-25ish. For quick.

Smoked beef cheeks, 4hr smoke, 5hr confit in tallow. Amazing.

The last few years my go to has been baby back ribs. The price is right and they are always good. I do them at 275ish for 4.5 to 5 hours no wrap. Butt Rub and some mustard, apple wood smoke

Throw some jalapeño poppers on or stuffed mushrooms for a side. So good

My daily and fancy intermingle...

Lots of tri tip, pork chops/loin, sausage and pork butt.

I've done lots of ribeyes/rib roasts, salmon, dry aged tomahawks...

Pies, cinnamon rolls...

I don't know if any of those qualify as "fancy"...we use canning jars as drinking glasses at my house if that gives you any indication of my degree of sophistication.

Because they are the best drinking glasses.

Smoked tri tip is a favorite in our house. Just did some cowboy candy baby backs the other night that were bomber. Korean BBQ wings are a hit as well.

Going to give this chuck roast a go.
